- 1 whole chicken
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 4 cloves garlic, minced
- 1 lemon, quartered
- 1 onion, quartered
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, salt, pepper, rosemary, thyme, and garlic to create a fragrant herb rub.
- Pat the chicken dry with paper towels. Rub the herb mixture all over the chicken, making sure to get some under the skin for maximum flavor. Stuff the cavity of the chicken with the lemon and onion quarters. Place the chicken breast-side up in a roasting pan.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Notes
You can use the pan drippings to make a simple and flavorful gravy.
