- 3–4 lbs beef roast
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 cup beef broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the minced garlic, olive oil, salt, pepper, rosemary, thyme, and parsley to create a herb paste.
- Rub the herb mixture all over the beef roast.
- Place the roast in a roasting pan and add the beef broth to the bottom of the pan.
- Roast in the oven for about 1.5 to 2 hours, or until internal temperature reaches at least 145°F (63°C).
- Remove from the oven, cover with foil, and let it rest for 15-20 minutes before slicing.
- Serve with pan juices and your choice of sides.
Notes
For added flavor, marinate the roast for a few hours or overnight. Always use a meat thermometer for doneness.
