Ingredients

  • 34 lbs beef roast
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the minced garlic, olive oil, salt, pepper, rosemary, thyme, and parsley to create a herb paste.
  3. Rub the herb mixture all over the beef roast.
  4. Place the roast in a roasting pan and add the beef broth to the bottom of the pan.
  5. Roast in the oven for about 1.5 to 2 hours, or until internal temperature reaches at least 145°F (63°C).
  6. Remove from the oven, cover with foil, and let it rest for 15-20 minutes before slicing.
  7. Serve with pan juices and your choice of sides.

Notes
