Description

A delightful Italian pasta salad featuring cheesy tortellini, fresh vegetables, and savory salami, perfect for any occasion.


Ingredients

  • 20 ounces fresh or frozen cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cup sliced cucumbers
  • 1 cup black olives, sliced
  • 1 cup mozzarella balls or cubed mozzarella cheese
  • 1/2 cup sliced red onion
  • 1 cup Italian salami, diced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup Italian dressing (homemade or store-bought)
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process. Let it cool completely.
  2. In a large salad bowl, combine the cooled tortellini, cherry tomatoes, cucumbers, black olives, mozzarella, red onion, and diced salami.
  3. Drizzle the Italian dressing over the salad ingredients in the bowl. Gently toss everything together until all ingredients are well coated in the dressing.
  4. Add in the freshly grated Parmesan cheese and chopped basil. Toss again lightly. Season with salt and pepper to taste. Refrigerate the pasta salad for at least 1 hour before serving to allow the flavors to meld together. Before serving, give the salad a final toss, and if necessary, add a bit more dressing if the pasta has absorbed too much. Serve chilled and enjoy!
