  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 cup bell peppers, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken breasts, cherry tomatoes, bell peppers, red onion, and minced garlic.
  3. Drizzle with olive oil and sprinkle with Italian seasoning, along with salt and pepper. Toss well to coat.
  4. Spread the mixture evenly on a sheet pan, ensuring space between pieces.
  5. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C), then garnish with fresh basil before serving.

Notes

For even cooking, use chicken breasts that are uniform in size. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
