- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups broccoli, chopped (including stems)
- 4 cups vegetable broth
- 1 medium potato, peeled and diced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- 1/2 cup heavy cream (optional)
- Freshly grated Parmesan cheese, for serving
- Crusty bread, for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped broccoli and diced potato. Cook for an additional 5 minutes until the broccoli starts to soften.
- Pour in the vegetable broth and add dried oregano and red pepper flakes. Bring to a gentle boil, then simmer for 15-20 minutes until tender.
- Use an immersion blender to puree the soup until smooth.
- If desired, stir in heavy cream and heat through. Adjust seasoning to taste.
- Serve hot, garnished with Parmesan cheese and croutons.

For a plant-based option, substitute heavy cream with a plant-based cream alternative. Adjust seasoning and spice level as desired.
