Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli, chopped (including stems)
  • 4 cups vegetable broth
  • 1 medium potato, peeled and diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 1/2 cup heavy cream (optional)
  • Freshly grated Parmesan cheese, for serving
  • Crusty bread, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the chopped broccoli and diced potato. Cook for an additional 5 minutes until the broccoli starts to soften.
  4. Pour in the vegetable broth and add dried oregano and red pepper flakes. Bring to a gentle boil, then simmer for 15-20 minutes until tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. If desired, stir in heavy cream and heat through. Adjust seasoning to taste.
  7. Serve hot, garnished with Parmesan cheese and croutons.

Notes

For a plant-based option, substitute heavy cream with a plant-based cream alternative. Adjust seasoning and spice level as desired.
