- 12 large mushrooms
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Clean the mushrooms and gently remove the stems.
- In a skillet, heat the olive oil over medium heat. Sauté the minced garlic until fragrant, about 1 minute.
- Add the chopped spinach and sauté until it wilts, approximately 2-3 minutes.
- In a bowl, combine the sautéed spinach mixture with feta cheese, cream cheese, breadcrumbs, salt, and pepper. Mix until well combined.
- Stuff each mushroom cap with the filling and place them on a baking sheet.
- Bake for 20-25 minutes, until tender and golden. Garnish with fresh parsley before serving.
Notes
For a spicier version, add red pepper flakes to the filling. Use gluten-free breadcrumbs to make it gluten-free.
