Irresistible Spinach and Feta Stuffed Mushrooms

Description

Delicious stuffed mushrooms filled with creamy spinach and feta, perfect for appetizers or side dishes.


Ingredients

  • 12 large mushrooms
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Clean the mushrooms and gently remove the stems.
  2. In a skillet, heat the olive oil over medium heat. Sauté the minced garlic until fragrant, about 1 minute.
  3. Add the chopped spinach and sauté until it wilts, approximately 2-3 minutes.
  4. In a bowl, combine the sautéed spinach mixture with feta cheese, cream cheese, breadcrumbs, salt, and pepper. Mix until well combined.
  5. Stuff each mushroom cap with the filling and place them on a baking sheet.
  6. Bake for 20-25 minutes, until tender and golden. Garnish with fresh parsley before serving.

Notes

For a spicier version, add red pepper flakes to the filling. Use gluten-free breadcrumbs to make it gluten-free.
