Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 cup pastry cream
  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, raspberries)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, and sugar until it resembles coarse crumbs.
  3. Add the egg yolk and vanilla extract, mixing until a smooth dough forms.
  4. Roll out the dough to about 1/8-inch thick and cut circles for the mini tartlet pan.
  5. Press the dough circles into the mini tartlet pan and bake for 12-15 minutes until lightly golden.
  6. Cool the tart shells completely in the pan before moving to a cooling rack.
  7. Fill each cooled tart shell with pastry cream.
  8. Arrange assorted fresh fruits on top of the pastry cream.
  9. Dust with powdered sugar just before serving.

Notes

Store in an airtight container in the refrigerator for up to 2 days. Best enjoyed on the same day.
