Ingredients

  • 2 cups zucchini, sliced
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can artichoke hearts, drained and quartered
  • 1 cup feta cheese, crumbled
  • 2 teaspoons dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine zucchini, bell peppers, cherry tomatoes, onion, garlic, and artichoke hearts.
  3. Drizzle with olive oil, sprinkle with oregano, salt, and pepper; toss to coat.
  4. Spread mixture in a greased baking dish and top with feta cheese. Bake for 25-30 minutes until veggies are tender and lightly browned.
  5. Garnish with fresh basil before serving.

Notes

For a unique flavor, substitute zucchini with yellow squash or different types of bell peppers. Can be made vegan by omitting feta.
