- 2 cups zucchini, sliced
- 1 cup bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can artichoke hearts, drained and quartered
- 1 cup feta cheese, crumbled
- 2 teaspoons dried oregano
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine zucchini, bell peppers, cherry tomatoes, onion, garlic, and artichoke hearts.
- Drizzle with olive oil, sprinkle with oregano, salt, and pepper; toss to coat.
- Spread mixture in a greased baking dish and top with feta cheese. Bake for 25-30 minutes until veggies are tender and lightly browned.
- Garnish with fresh basil before serving.
Notes
For a unique flavor, substitute zucchini with yellow squash or different types of bell peppers. Can be made vegan by omitting feta.
