- 1 cup pitted medjool dates
- 1/2 cup almond butter
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup rolled oats
- Optional: chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Blend the pitted medjool dates in a food processor until they form a sticky paste.
- Add almond butter, cocoa powder, vanilla extract, and salt to the food processor and blend until smooth.
- Stir in the rolled oats and any optional ingredients by hand.
- Spread the brownie mixture into the prepared baking dish, smoothing it out evenly.
- Bake for 20-25 minutes, or until firm to the touch.
- Let cool before cutting into squares.
Notes
Store leftovers in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week.
