- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- Chocolate frosting for filling
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, combine the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the creamed mixture until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes until the cookies are set but still soft in the center.
- Allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
- Spread chocolate frosting on the bottom of one cookie and top with another to create a sandwich. Repeat until all cookies are paired.
