Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • Chocolate frosting for filling

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed mixture until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheets, spaced about 2 inches apart.
  8. Bake for 10-12 minutes until the cookies are set but still soft in the center.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
  10. Spread chocolate frosting on the bottom of one cookie and top with another to create a sandwich. Repeat until all cookies are paired.
