- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- 4 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 large carrots, sliced
- 3 large potatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 1 can (14.9 oz) Guinness stout beer
- 4 cups beef broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by patting the beef cubes dry with paper towels to achieve a good sear.
- In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, searing on all sides until browned, about 5-7 minutes. Remove the beef and set aside.
- Add the remaining 2 tablespoons of olive oil to the pot. Sauté the chopped onions for about 5 minutes until softened, then add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the sliced carrots and diced potatoes, stirring to coat the vegetables in the flavorful oils.
- Mix in the tomato paste, dried thyme, and dried rosemary, stirring continuously for about 2 minutes.
- Pour the Guinness beer into the pot, scraping the bottom to deglaze, and let it simmer for about 3 minutes.
- Return the browned beef to the pot, along with any accumulated juices. Add the beef broth and bay leaves. Stir and bring to a gentle boil.
- Once boiling, reduce heat to low and cover the pot. Let it simmer for 1.5 to 2 hours, stirring occasionally.
- Once cooked, season with salt and pepper to taste, and discard the bay leaves before serving.
- Serve hot, garnished with fresh chopped parsley, alongside crusty bread or creamy mashed potatoes.
Notes
This stew is perfect for meal prep and tastes even better the next day. Can be made in advance and stored for up to three days in the fridge.
