- 2 pounds beef short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons soy sauce
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the short ribs generously with salt and pepper.
- Set the Instant Pot to ‘Sauté’ and add the olive oil. Brown the short ribs on all sides (about 4-5 minutes), then remove and set aside.
- Add onion and garlic to the pot, sauté until soft (2-3 minutes). Stir in broth, wine, soy sauce, tomato paste, and paprika.
- Return short ribs to the pot, close the lid, set to ‘Manual’, and cook for 45 minutes with a 10-minute natural release.
- Remove short ribs, and to thicken the sauce, use ‘Sauté’ to reduce the liquid. Serve garnished with parsley.
Notes
For best flavor, look for well-marbled short ribs. You can substitute some beef broth with more red wine for depth of flavor.
