Ingredients

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together cocoa powder, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract; whisk until blended.
  4. Gradually add the wet mixture to the dry ingredients and mix until just combined, then stir in the boiling water.
  5. Pour the batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

Serve with whipped cream, vanilla ice cream, or a drizzle of chocolate ganache. Store in an airtight container for up to three days.
