Ingredients

- 1/4 cup Water
- 1/4 cup Honey
- 1 tbsp Dried Culinary Lavender
- 1 tsp Matcha Powder (ceremonial grade recommended)
- 2 oz Hot Water (not boiling, around 175°F/80°C)
- 1 cup Milk (dairy or non-dairy)
- 1 cup Ice (or to fill glass)
- 1 sprig Fresh Lavender (optional, for garnish)
Instructions
- Start by preparing the Honey Lavender Syrup. In a small saucepan, combine water, honey, and dried culinary lavender. Bring to a gentle simmer over low heat, stirring until honey is dissolved. Simmer for about 5 minutes, then remove from heat and let steep for 10 minutes. Strain and cool.
- Next, prepare the matcha. In a bowl, whisk together matcha powder with hot water (not boiling) using a bamboo whisk or milk frother until smooth and frothy.
- In a tall glass, add ice to fill halfway. Pour in the cooled honey lavender syrup followed by milk. Slowly pour prepared matcha over the milk mixture to create a layered effect.
- For an elegant touch, garnish your drink with a sprig of fresh lavender.
Notes
Best enjoyed fresh; store leftover syrup in the refrigerator for up to one week.
