Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Green onions for garnish

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, sesame oil, and black pepper to create the marinade.
  2. Place the chicken thighs in a resealable bag and pour the marinade over them. Seal the bag tightly, ensuring that the chicken is well-coated. Refrigerate for at least 2 hours, but for best flavor, let it sit overnight.
  3. Preheat your grill to medium heat. Remove the chicken from the marinade, making sure to reserve the marinade for basting. Grill the chicken for about 5-7 minutes on each side, basting with the reserved marinade occasionally until the chicken is cooked through and reaches an internal temperature of 165°F, with beautiful grill marks.
  4. Once grilled, remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped green onions before serving.

Notes

Marinate for up to 24 hours for even better flavor. Use bone-in chicken thighs for juicier meat.
