- 4 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 3 tablespoons honey
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh thyme (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cubed sweet potatoes, olive oil, honey, cinnamon, salt, and pepper. Stir gently to coat.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
- Remove from oven, let cool slightly, and garnish with fresh thyme before serving.
Notes
For even roasting, cut sweet potatoes into uniform cubes. Can enhance sweetness with extra honey before serving.
