- 1/2 cup unsweetened pineapple juice
- 1/4 cup honey
- 2 tablespoons low sodium soy sauce
- 1 tablespoon rice vinegar
- 1 clove minced garlic
- 1/2 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 4 salmon fillets
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- Chopped fresh cilantro (for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Begin by preparing your glaze. In a small saucepan, combine pineapple juice, honey, soy sauce, rice vinegar, garlic, and ginger. Whisk thoroughly.
- In a separate bowl, mix cornstarch with cold water to create a slurry. Heat the saucepan over medium heat until the glaze begins to simmer, then gradually whisk in the slurry. Continue to cook until the glaze thickens.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat dry the salmon fillets, season with salt and pepper, and place on the baking sheet. Brush with olive oil.
- Brush half of the honey pineapple glaze over the salmon fillets and bake for 12-15 minutes until the internal temperature reaches 145°F (63°C). In the last minutes of baking, brush with additional glaze.
Notes
Serve alongside steamed rice, quinoa, or salad. Add fresh pineapple or lime wedges for garnish.
