Ingredients

  • 1/2 cup unsweetened pineapple juice
  • 1/4 cup honey
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 clove minced garlic
  • 1/2 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 4 salmon fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • Chopped fresh cilantro (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Begin by preparing your glaze. In a small saucepan, combine pineapple juice, honey, soy sauce, rice vinegar, garlic, and ginger. Whisk thoroughly.
  2. In a separate bowl, mix cornstarch with cold water to create a slurry. Heat the saucepan over medium heat until the glaze begins to simmer, then gradually whisk in the slurry. Continue to cook until the glaze thickens.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat dry the salmon fillets, season with salt and pepper, and place on the baking sheet. Brush with olive oil.
  4. Brush half of the honey pineapple glaze over the salmon fillets and bake for 12-15 minutes until the internal temperature reaches 145°F (63°C). In the last minutes of baking, brush with additional glaze.

Notes

Serve alongside steamed rice, quinoa, or salad. Add fresh pineapple or lime wedges for garnish.
