Description

These delicious muffins are packed with fresh blueberries and protein, perfect for a nutritious breakfast or snack.


Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a large bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth and well blended.
  3. Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda. Stir gently to combine, being careful not to overmix.
  4. Fold in the fresh blueberries gently to avoid crushing them.
  5. Spoon the batter into a lined muffin pan, dividing it evenly to make 12 muffins.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store any leftover muffins in an airtight container at room temperature for up to three days, or freeze for up to three months.
