Description

Delightful mix of chewy coconut, creamy almond butter, and rich dark chocolate, reminiscent of the popular candy bar but made with wholesome ingredients.


Ingredients

  • 1 cup shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • Whole almonds for topping

Instructions

  1. In a mixing bowl, combine shredded coconut, almond butter, honey (or maple syrup), and vanilla extract until well mixed.
  2. Line a baking sheet with parchment paper. Use a cookie scoop to portion the coconut mixture into small balls and place them on the baking sheet.
  3. Press a whole almond into the top of each ball.
  4. Freeze the coconut balls for about 30 minutes until firm.
  5. Melt the dark chocolate chips in a microwave or double boiler, stirring until smooth.
  6. Dip each coconut ball into the melted chocolate to coat thoroughly, then return to the baking sheet.
  7. Refrigerate until the chocolate is set, about 15 minutes.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
