- 1 cup shredded coconut
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- Whole almonds for topping
Instructions
- In a mixing bowl, combine shredded coconut, almond butter, honey (or maple syrup), and vanilla extract until well mixed.
- Line a baking sheet with parchment paper. Use a cookie scoop to portion the coconut mixture into small balls and place them on the baking sheet.
- Press a whole almond into the top of each ball.
- Freeze the coconut balls for about 30 minutes until firm.
- Melt the dark chocolate chips in a microwave or double boiler, stirring until smooth.
- Dip each coconut ball into the melted chocolate to coat thoroughly, then return to the baking sheet.
- Refrigerate until the chocolate is set, about 15 minutes.
