Ingredients

  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup shredded mozzarella cheese (optional)

Instructions

  1. Gather all your ingredients and chop the chicken breast, bell pepper, zucchini, and broccoli into bite-sized pieces.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken breast, seasoning with salt, pepper, and Italian seasoning. Sauté until cooked through and golden brown, about 7-10 minutes.
  3. Stir in the diced bell pepper, chopped zucchini, and broccoli florets. Cook for an additional 5-7 minutes, or until the vegetables are tender-crisp. Add minced garlic in the last minute of cooking.
  4. If using mozzarella cheese, sprinkle it over the chicken and vegetables, cover the skillet, and let it sit for a few minutes until the cheese melts.
