Instructions
- Preheat the oven to 350°F (175°C). Gather all your ingredients and ensure your muffin tin is clean and ready to go.
- Whisk the egg whites in a mixing bowl until slightly frothy. Season with salt and pepper.
- Stir in the chopped spinach, diced bell peppers, and cheese until well incorporated.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg white mixture into each muffin cup, filling them about 3/4 full. Bake for 15-20 minutes or until set and lightly golden.
- Let them cool for a few minutes before removing from the tin.
