- 1.75 lbs cubed chicken breast
- 3 cloves minced garlic
- 2 teaspoons onion powder
- 2 teaspoons mixed herbs
- 1 teaspoon chili flakes
- 2 teaspoons paprika
- 1 teaspoon salt
- 2 teaspoons olive oil
- 1.75 lbs cubed potatoes
- 1 teaspoon garlic powder
- 0.5 cup milk
- 3.5 oz light cream cheese
- 1.4 oz grated Parmesan cheese
- 1.75 oz shredded mozzarella
- Fresh parsley for garnish
Instructions
- In a large bowl, toss chicken with garlic, onion powder, mixed herbs, chili flakes, paprika, salt, and olive oil until well-coated.
- Heat a large pan over medium-high heat, add chicken, and cook for 5-6 minutes until browned. Reduce heat to medium-low.
- In a separate bowl, toss potatoes with salt, garlic powder, mixed herbs, chili flakes, and paprika. Cook in an air fryer or oven until crispy.
- Lower heat on the chicken pan, add milk and cream cheese, stirring until melted and smooth. Stir in Parmesan and mozzarella until creamy. Gently fold in crispy potatoes.
- Cover and cook on low heat for 4-5 minutes to meld flavors. Garnish with parsley and serve hot.
Notes
Serves well with a fresh salad or steamed vegetables. Store leftovers in an airtight container for up to 3 days.
