Description

A nutritious baked oatmeal combining sweet carrots and Greek yogurt, perfect for breakfast or a healthy snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup Greek yogurt
  • 1/4 cup protein powder
  • 1/4 cup maple syrup or honey
  • 1/2 cup milk or almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt to taste
  • Optional toppings: chopped nuts, raisins, or cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, grated carrots, Greek yogurt, protein powder, maple syrup, milk, baking powder, cinnamon, nutmeg, and a pinch of salt. Stir until well combined.
  3. Pour the mixture into a greased baking dish and spread it out evenly. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  4. Allow to cool slightly before slicing into squares. Serve warm with optional toppings.

Notes

For richer taste, consider whole milk. Adjust sweetness according to preference.
