- 12 jumbo pasta shells
- 1 medium zucchini, finely chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh herbs (basil, parsley, etc.)
- Salt and pepper to taste
- 2 cups marinara sauce
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
- In a skillet, heat olive oil and sauté the chopped zucchini until tender.
- In a mixing bowl, combine sautéed zucchini, ricotta, mozzarella, Parmesan, egg, herbs, salt, and pepper to create the filling.
- Stuff each shell with the mixture carefully.
- Spread marinara sauce in a baking dish, place stuffed shells inside, and pour remaining sauce on top.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbly and golden.
- Serve warm and enjoy!
