Description

A delightful blend of fresh herbs, creamy cheeses, and tender zucchini stuffed into jumbo pasta shells, perfect for family dinners and gatherings.


Ingredients

  • 12 jumbo pasta shells
  • 1 medium zucchini, finely chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh herbs (basil, parsley, etc.)
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
  2. In a skillet, heat olive oil and sauté the chopped zucchini until tender.
  3. In a mixing bowl, combine sautéed zucchini, ricotta, mozzarella, Parmesan, egg, herbs, salt, and pepper to create the filling.
  4. Stuff each shell with the mixture carefully.
  5. Spread marinara sauce in a baking dish, place stuffed shells inside, and pour remaining sauce on top.
  6. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbly and golden.
  7. Serve warm and enjoy!
