- 2 pounds beef stew meat
- 4 cups beef broth
- 1 cup cauliflower florets
- 1 cup green beans, chopped
- 1 cup mushrooms, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef stew meat and brown it on all sides.
- Stir in the chopped onion and minced garlic, sautéing until softened.
- Pour in the beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper. Bring to a boil, then reduce and simmer for 1.5 hours.
- Add cauliflower florets, green beans, and mushrooms. Simmer for an additional 30 minutes or until vegetables are tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat before serving.
