Ingredients

  • 2 pounds beef stew meat
  • 4 cups beef broth
  • 1 cup cauliflower florets
  • 1 cup green beans, chopped
  • 1 cup mushrooms, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef stew meat and brown it on all sides.
  3. Stir in the chopped onion and minced garlic, sautéing until softened.
  4. Pour in the beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper. Bring to a boil, then reduce and simmer for 1.5 hours.
  5. Add cauliflower florets, green beans, and mushrooms. Simmer for an additional 30 minutes or until vegetables are tender.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat before serving.
