Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they soften and become fragrant, about 5 minutes.
  2. Stir in the broccoli florets and cook for a few minutes until the broccoli begins to deepen in color and soften.
  3. Pour in the chicken or vegetable broth, bringing it to a boil. Once boiling, reduce the heat and let it simmer until the broccoli is tender, about 10-15 minutes.
  4. Blend the soup until smooth using an immersion blender or by carefully transferring it to a regular blender. If using a regular blender, allow it to cool slightly to avoid steam buildup.
  5. Return the soup to low heat and stir in the heavy cream or almond milk along with the shredded cheddar cheese until melted and well combined.
