Ingredients

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the garlic, carrots, and celery until softened—about 5 minutes.
  2. Add the vegetable broth, diced tomatoes, and dried oregano to the pot. Bring the mixture to a boil.
  3. Stir in the tortellini and cook according to package instructions—usually around 3-5 minutes.
  4. In the last few minutes of cooking, add the spinach or kale until wilted. Season with salt and pepper to taste. Stir well before serving hot.

Notes
