Ingredients

  • 1 cup cooked quinoa
  • 1 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • Pinch of salt

Instructions

  1. In a medium bowl, mix the cooked quinoa, peanut butter, honey or maple syrup, vanilla extract, and salt until well combined.
  2. Line a muffin tin with cupcake liners.
  3. Fill each liner with the quinoa mixture, pressing down to form a compact layer.
  4. In a microwave or double boiler, melt the dark chocolate chips until smooth.
  5. Pour the melted chocolate over each cup, spreading it evenly.
  6. Refrigerate for at least 30 minutes until set.
  7. Once set, remove from the muffin tin and enjoy!

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
