Healthy Cottage Cheese Oat Bread

Description

A nutritious and easy-to-make bread packed with protein and fiber, perfect for breakfast or as a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, eggs, and honey or maple syrup, along with the baking powder, baking soda, and salt.
  3. Mix well until all ingredients are fully incorporated. Gradually add the whole wheat flour and mix until smooth. If using nuts or seeds, fold them in.
  4. Pour the batter into the prepared loaf pan, smoothing the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes

For enhanced flavor, add vanilla extract or nutmeg. Can use gluten-free flour blend for a gluten-free version.
