- 1 cup cottage cheese
- 1 cup rolled oats
- 2 eggs
- 1/2 cup whole wheat flour
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1/2 cup chopped nuts or seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the cottage cheese, rolled oats, eggs, and honey or maple syrup, along with the baking powder, baking soda, and salt.
- Mix well until all ingredients are fully incorporated. Gradually add the whole wheat flour and mix until smooth. If using nuts or seeds, fold them in.
- Pour the batter into the prepared loaf pan, smoothing the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
Notes
For enhanced flavor, add vanilla extract or nutmeg. Can use gluten-free flour blend for a gluten-free version.
