Description

A convenient and nutritious breakfast casserole packed with protein and colorful veggies, perfect for meal prep or brunch gatherings.


Ingredients

  • 6 large eggs
  • 1 cup milk
  • 2 cups diced vegetables (bell peppers, spinach, zucchini)
  • 1 cup cooked and crumbled turkey sausage
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper.
  3. Heat olive oil in a skillet over medium heat, add the diced vegetables, and sauté until tender (about 5-7 minutes).
  4. Add the cooked turkey sausage to the skillet with the vegetables and stir to combine. Pour this mixture into the egg mixture along with half the cheese.
  5. Pour the combined mixture into the greased dish, top with the remaining cheese, and bake for 30-35 minutes until set and golden.
  6. Allow to cool slightly before slicing and serving.

Notes

Feel free to customize vegetables and proteins. This casserole also freezes well.
