- 3 ripe bananas
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil or unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups whole wheat flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the ripe bananas in a large bowl until smooth.
- Stir honey (or maple syrup), melted coconut oil (or butter), eggs, and vanilla extract into the mashed bananas.
- In another bowl, mix together baking soda, salt, cinnamon, and whole wheat flour.
- Combine the wet and dry ingredients, stirring until just incorporated.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Ensure bananas are very ripe for best sweetness. For a gluten-free version, substitute whole wheat flour with gluten-free flour.
