Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup celery, diced
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: cherry tomatoes, chopped cilantro

Instructions

  1. In a large bowl, combine the shredded chicken, diced avocado, red onion, and celery.
  2. In a separate small bowl, mix together the Greek yogurt, lemon juice, salt, and pepper.
  3. Pour the yogurt mixture over the chicken and avocado mixture, and gently toss to coat.
  4. Add more salt and pepper if needed, and fold in cherry tomatoes and cilantro if desired. Serve immediately or refrigerate for a chilled option.
