Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a bowl, mix coconut milk, lime juice, lime zest, garlic, salt, black pepper, and cayenne pepper if using until well-blended.
  2. Add the prepared shrimp to the bowl and ensure they are fully coated in the marinade. Cover the bowl and let the shrimp marinate in the refrigerator for 30 minutes.
  3. Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers for grilling.
  4. Grill the shrimp for 2-3 minutes on each side or until they turn pink and are cooked through. Remove from the grill and serve immediately with additional lime wedges.

Notes

For variations, consider adding fresh herbs or diced mango to the marinade. Ensure not to overcook shrimp as they should be just opaque when done.
