- 2 lbs boneless chicken thighs
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Juice of 1 lemon
- Wooden or metal skewers
Instructions
- In a bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, ground paprika, turmeric, cinnamon, salt, pepper, and lemon juice to create a marinade.
- Add the chicken thighs to the marinade and coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers, ensuring they are packed tightly but not overcrowded. Grill the kebabs for 5-7 minutes on each side, until cooked through and slightly charred.
- Remove the kebabs from the grill and let them rest for a few minutes before serving. Serve with warm pita bread, tahini sauce, and fresh vegetables.
Notes
For more intense flavor, let the chicken marinate overnight. Use soaked wooden skewers to prevent burning.
