Description

A delightful fusion of chewy tortellini with fresh veggies, briny olives, and creamy feta in a flavorful dressing.


Ingredients

  • 8 oz tortellini
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 small red onion, diced
  • 1/2 cup Kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions in a pot of boiling water. Once cooked, drain well and let it cool for a few minutes.
  2. In a large bowl, combine the cooled tortellini, halved cherry tomatoes, diced cucumber, diced red onion, sliced Kalamata olives, and crumbled feta cheese. Gently mix these ingredients to ensure even distribution.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper.
  4. Pour the dressing over the salad and toss everything together until all ingredients are well-coated. Serve chilled or at room temperature.

Notes

For added freshness, garnish with parsley or basil. Can be made ahead for enhanced flavors.
