- 8 oz tortellini
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1 small red onion, diced
- 1/2 cup Kalamata olives, sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions in a pot of boiling water. Once cooked, drain well and let it cool for a few minutes.
- In a large bowl, combine the cooled tortellini, halved cherry tomatoes, diced cucumber, diced red onion, sliced Kalamata olives, and crumbled feta cheese. Gently mix these ingredients to ensure even distribution.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper.
- Pour the dressing over the salad and toss everything together until all ingredients are well-coated. Serve chilled or at room temperature.
Notes
For added freshness, garnish with parsley or basil. Can be made ahead for enhanced flavors.
