Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • Juice and zest of 1 lemon

Instructions

  1. Combine the ground meat, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, salt, and pepper in a bowl. Shape the mixture into small meatballs, about 1 inch in diameter.
  2. Heat the olive oil in a skillet over medium heat. Add the meatballs to the skillet and cook until browned on all sides, about 5-7 minutes.
  3. Pour in the chicken broth and the juice and zest of one lemon. Stir to combine and bring to a simmer. Let it cook for about 10-15 minutes, until the meatballs are cooked through.
  4. Serve the meatballs warm, drizzled with extra lemon sauce if desired.
