- 2 cups cooked quinoa
- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup Kalamata olives, pitted and halved
- 1 cup feta cheese, crumbled
- 1 cup tzatziki sauce
- Fresh parsley for garnish (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season the diced chicken breast with oregano, garlic powder, onion powder, salt, and pepper. Mix well to coat.
- Add the seasoned chicken to the skillet and cook for 7-10 minutes until cooked through.
- Prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and slice the red onion. Combine with quinoa and olives in a bowl, drizzle with remaining olive oil, and toss.
- Once the chicken is cooked, add it to the quinoa mixture and gently toss.
- Serve in bowls topped with feta cheese and tzatziki, garnished with parsley if desired.
