Description

A delicious and healthy gluten-free zucchini bread with a golden crust and moist crumb, perfect for breakfast or snacks.


Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, almond flour, gluten-free flour, sugar, brown sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir gently until just mixed. Pour the batter into the prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow the loaf to cool for at least 10 minutes before transferring to a cooling rack.

Notes

Best enjoyed warm or at room temperature. Store in an airtight container for up to 3 days, or freeze for longer storage.
