Delightful gluten-free cookies filled with melted chocolate, perfect for the holiday season.


Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup powdered sugar
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, powdered sugar, melted coconut oil, vanilla extract, and salt. Mix until a cohesive dough forms.
  3. Roll the dough into small balls, about one inch in diameter, and place on the prepared baking sheet, spaced two inches apart.
  4. Use your thumb or the back of a spoon to make a small indent in the center of each cookie.
  5. Fill each indent with a few chocolate chips.
  6. Bake for 10-12 minutes until the edges are firm and the centers remain slightly soft.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Use melted coconut oil that is not hot to avoid cooking the dough. For variations, try nut butter or fruit jam fillings.
