- 3 ripe bananas
- 2 eggs
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup gluten-free flour blend
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup honey or maple syrup (optional)
- 1/2 cup nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the ripe bananas in a bowl, then stir in the eggs, melted coconut oil, and vanilla extract until combined.
- In another bowl, mix the gluten-free flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, and optionally fold in honey or maple syrup along with nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor. If you don’t have coconut oil, substitute with olive oil or melted butter. Let the cooled bread sit for a few hours before slicing for the best texture.
