- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 cup mashed strawberries
- 1 teaspoon vanilla extract
- For the glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the melted butter, eggs, mashed strawberries, and vanilla extract until smoothly combined.
- Pour the wet mixture into the bowl of dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled bread.
Notes
Can store leftovers in an airtight container for up to 3 days or refrigerate for up to a week. For freezing, wrap tightly and store for up to 3 months.
