Description

A delightful holiday treat combining classic gingerbread flavors with a charming log cake shape, perfect for festive gatherings.


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 3 large eggs
  • 1 cup molasses
  • 1/2 cup buttermilk
  • Powdered sugar for dusting
  • Cream cheese frosting (for filling and decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the molasses and buttermilk.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 12-15 minutes, or until a toothpick comes out clean.
  8. Once baked, let it cool for a few minutes before turning it out onto a clean towel dusted with powdered sugar.
  9. Spread cream cheese frosting over the cake, then carefully roll it up with the towel, starting from one end.
  10. Wrap the rolled cake in plastic wrap and refrigerate for at least an hour.
  11. Unroll the cake, frost it again, and decorate as desired.
  12. Serve chilled or at room temperature.

Notes

Use fresh spices for the best flavor. If you run out of cream cheese frosting, whipped cream can also be a nice filling.
