  • 2 eggs
  • 4 cups all-purpose flour
  • 1 tablespoon ground ginger

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped nuts (almonds or hazelnuts)
  • 1 cup dried fruits (apricots, figs, or raisins)
  • 1 cup powdered sugar (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Cream together the softened butter and brown sugar until light and fluffy. Add honey and eggs, mixing until combined.
  3. In another bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt. Gradually add to wet ingredients and stir until incorporated. Fold in chopped nuts and dried fruits, then spread into the prepared baking pan.
  4. Bake for 25-30 minutes or until a toothpick comes out clean. Once cooled, drizzle with powdered sugar icing if desired, cut into bars, and serve.

Notes

For extra flavor, consider adding orange or lemon zest. Store in an airtight container for up to a week, or refrigerate for up to two weeks.
