Quick and delicious garlic butter steak bites with zucchini, perfect for a weeknight dinner.
Ingredients

- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season them generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until beautifully browned. Once browned, remove the steak from the skillet and set it aside.
- Add butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Next, add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
- Return the steak bites to the skillet, tossing everything together to coat in the garlic butter. Cook for an additional 1-2 minutes until the steak is heated through. If desired, garnish with fresh parsley before serving. Serve immediately.
Notes
Serve over rice or alongside a salad. Leftovers can be stored in an airtight container for up to 3 days.
