Description

Quick and delicious garlic butter steak bites with zucchini, perfect for a weeknight dinner.


Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season them generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until beautifully browned. Once browned, remove the steak from the skillet and set it aside.
  3. Add butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Next, add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  4. Return the steak bites to the skillet, tossing everything together to coat in the garlic butter. Cook for an additional 1-2 minutes until the steak is heated through. If desired, garnish with fresh parsley before serving. Serve immediately.

Notes

Serve over rice or alongside a salad. Leftovers can be stored in an airtight container for up to 3 days.
