Description

A smooth, stretchy, and fluffy staple in West African cuisine, perfect for pairing with soups and stews.

Ingredients

Scale
  • 2 cups cassava, peeled and chopped
  • 2 cups yams, peeled and chopped
  • Water
  • Pinch of salt

Instructions

  1. Begin by peeling and chopping the cassava and yams into roughly equal chunks.
  2. Place the chopped cassava and yams into a large pot and cover with water. Add a pinch of salt and boil over medium-high heat before reducing to a simmer. Cook until fork-tender.
  3. Carefully drain the water using a colander and let the yams and cassava cool slightly.
  4. Transfer into a large bowl or mortar and pestle, mashing until smooth. Add warm water if needed for desired consistency.
  5. Serve warm, shaped into balls or scoops, with your favorite African soup or stew.

Notes

Use fresh cassava and yams for the best flavor; adjust the water for desired fufu consistency.
