Description

Refreshing and colorful fruit spring rolls filled with fresh fruits and mint, perfect for warm days or as a light snack.

Ingredients

  • Rice paper wrappers
  • Fresh fruits (e.g., strawberries, mango, kiwi, banana)
  • Mint leaves
  • Honey or agave syrup (optional)
  • Peanut butter or nut butter (optional)

Instructions

  1. Begin by preparing all your fresh fruits. Wash them thoroughly and slice them into thin, manageable strips.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper at a time into the water until it becomes soft and pliable.
  3. Once softened, lay the rice paper wrapper flat on a clean surface. Place a small amount of each fruit and a few mint leaves in the center.
  4. Carefully fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top.

Notes

Best enjoyed fresh, but can be stored in the refrigerator wrapped in plastic for 1-2 days.
