Instructions

  1. Start by preparing your pie crust. A store-bought crust can save you time, but if you prefer homemade, ensure it is blind-baked and cooled before adding the filling.
  2. In a saucepan, combine 3/4 cup of granulated sugar and 2 tablespoons of cornstarch. This mixture will help thicken the strawberry filling.
  3. Add 1/2 cup of water and 1 tablespoon of lemon juice to the saucepan. Cook over medium heat, stirring constantly until the mixture thickens and becomes bubbly.
  4. Once the mixture has thickened, remove it from the heat and let it cool slightly. Add the halved strawberries to the saucepan, gently mixing until they are fully coated in the glaze.
  5. Pour this strawberry mixture into the prepared pie crust and refrigerate for at least 120 minutes to allow it to set. Serve chilled, and feel free to top with whipped cream for an extra touch of decadence.
