- 1 round Brie cheese
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon sugar
- 4 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 baguette, sliced
- 1 cup shredded Gruyère cheese
Instructions
- In a large skillet, melt the butter and olive oil over medium heat. Add the thinly sliced onions and sprinkle in the sugar. Cook until caramelized, about 20-30 minutes, stirring frequently. Add minced garlic and cook for 1 minute.
- Pour in the beef broth and add the thyme. Bring to a gentle simmer and cook for 15-20 minutes. Season with salt and pepper to taste.
- Preheat your oven to 350°F (175°C). Place the round Brie cheese in a baking dish and pour the onion soup mixture over it. Sprinkle shredded Gruyère on top.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Serve warm with toasted baguette slices for dipping.
Notes
For perfectly caramelized onions, cook them low and slow. You can also experiment with different cheeses.
