- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 large onions, sliced
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups cooked shredded chicken
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce (optional)
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large oven-safe skillet or Dutch oven, melt the butter and olive oil over medium heat and add the sliced onions, sugar, and salt. Cook for 20-25 minutes, stirring occasionally, until caramelized.
- Stir in the orzo and cook for an additional 2 minutes. Mix in the chicken, thyme, pepper, and Worcestershire sauce.
- Pour in the chicken broth and heavy cream, bringing to a simmer. Cover and cook for 8-10 minutes.
- Stir in 1 cup of mozzarella and Parmesan cheese until melted.
- Preheat the oven to 375°F. Sprinkle the remaining mozzarella on top and bake for 10-15 minutes until golden brown.
- Let the casserole rest for 5-10 minutes before serving.
Notes
