Description

A warm and hearty casserole featuring caramelized onions, tender chicken, and creamy orzo pasta, all topped with bubbling cheese.


Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 large onions, sliced
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups cooked shredded chicken
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce (optional)
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large oven-safe skillet or Dutch oven, melt the butter and olive oil over medium heat and add the sliced onions, sugar, and salt. Cook for 20-25 minutes, stirring occasionally, until caramelized.
  2. Stir in the orzo and cook for an additional 2 minutes. Mix in the chicken, thyme, pepper, and Worcestershire sauce.
  3. Pour in the chicken broth and heavy cream, bringing to a simmer. Cover and cook for 8-10 minutes.
  4. Stir in 1 cup of mozzarella and Parmesan cheese until melted.
  5. Preheat the oven to 375°F. Sprinkle the remaining mozzarella on top and bake for 10-15 minutes until golden brown.
  6. Let the casserole rest for 5-10 minutes before serving.
