- 3 ripe bananas
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup plant-based milk
- 1/4 cup vegetable oil
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas in a bowl until smooth.
- Add the sugar, plant-based milk, vegetable oil, and vanilla extract to the mashed bananas, mixing well.
- In another bowl, combine the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
Use very ripe bananas for the best results. For variations, consider adding nuts or chocolate chips.
